Most Moreish Popcorn

Sweet, salty, nutty, homemade caramelly popcorn. A most moreish snack. It was so yummy, in fact, that it was impossible to photograph in any kind of stylish way because it was gobbled up so quickly. Popcorn elves!

I tinkered just a little with this recipe, for a Salted Caramel Rocky Road Popcorn, from Jemma over at The Healthy Journey, to get a more simplified version to work in with what I had in my pantry. 


Caramelly Popcorn 
*not suitable for those with nut allergy*

Ingredients:

6 cups freshly popped popcorn
4 Tablespoons coconut oil
4 Tablespoons maple syrup
2 Tablespoons crunchy peanut butter  (or smooth if you prefer)
1/2 teaspoon salt

Method:

1.  Place freshly popped popcorn in a large bowl.

2. Melt coconut oil in a small saucepan.

3.  Add maple syrup, peanut butter and salt.

4.  Combine over a low heat until blended into a smooth caramelly sauce.

5.  Pour sauce over freshly popped popcorn.

6.  Mix until popcorn is coated evenly with caramelly sauce.

7.  Spread out evenly on a lined tray and place in freezer until set. 
     (This doesn't take very long!)

8.  Remove from freezer once set. Break into small clusters and keep in airtight container
      in the fridge. 

     * Keep a close eye on it because it will otherwise disappear.*

  1. I always have the kernels ready for making popcorn. I don't usually add any flavour however if all goes well I will give this recipe a go on Saturday night for our movie night. I'm sure they will be well received.

  2. Yum! I am a sucker for anything salty/sweet, do you remember "lolly gobble bliss bombs" salty, caramel-y, nutty bags of pop corn? I think your recipe sounds totally delicious! Have a lovely day.

  3. YUMMO!
    At our fortnightly car boot markets we have a company called Corndale Popcorn...that stuff is so addictive, it doesn't have the caramel sauce, but it is sweet and salty, and you just can't stop eating it! I don't know how they make it, but it's good!

  5. Yes, popcorn elves! It's always interesting to see other recipes, like this. I make a butterscotch popcorn, which is moorish in the same way! Only I keep it on the counter, or it would break your teeth if it was refrigerated, lol. ;)

    1. This popcorn didn't last long enough to reach teeth-breaking capacity. The coconut oil comes back to room temperature pretty quickly so I think our teeth are safe! Meg:)
