Sunday's Baking

I often bake in the morning on Sundays. I might make batches of biscuits, little muffins, a simple slice or occasionally a cake of some kind. These are then ready to pop into lunchboxes for the morning and afternoon teas to come during the week ahead. It makes things a little less hectic on weekday mornings!

It was a rainy, cold start to yesterday's Sunday, so while I was baking the oven warmed the kitchen and that tantalising smell of baked goodies wafted throughout our home. This is what I baked, with recipes at the links below each photograph:

 Simple focaccia with crispy cheese.
(You can top focaccia with cheese or herbs or olives...)

(A healthier version of an old favourite.)

Slice Notes:
I substituted 1/4 cup of brown rice flour for the 1/2 cup almond meal in the slice recipe simply because my son's school in a nut-free zone. I used ordinary, everyday jam instead of the chia jam suggested too and it all worked out just fine.

We ate slices of the focaccia, still warm from the oven, with lunch. It is the first "bread" I have made for a very long time (as I tend to bake flops rather than loaves;)  It was very simple to make so I think it might become a Sunday staple...topped with cheese or maybe herbs or olives and always sprinkled with sea salt. The gingerbread cakes and the slice were "sampled", of course, before being whisked away from my rather enthusiastic taste testers.

  1. I like the look of the simple Focaccia, yummy.
    I used to bake a lot more for school, since working, the baking has fallen by the wayside a bit, I had every intention of stocking the freezer before school went back (which is tomorrow for my kids) and it just didn't happen. I might whip up a batch of muffins when I get home from work today, it was on my mind to do, and shouldn't take long. Muffins are my go to lunch box item!

    1. Surprisingly for me, Cheryl, the focaccia was not as hard as a rock and was very tasty! (I am not known for my bread-making!) Muffins are regular lunchbox items here too, Cheryl. I love to use buttermilk in muffins. Happy baking today after work:) Meg

  2. I like the look of all these recipes Meg. Gingerbread cakes will go down well here as they all love ginger. Raspberry and coconut slice is another favourite. I remember Mum used to make it a lot. She also had a coconut cake recipe topped with raspberry and coconut which was also yum.
    I am going to make the focaccia as I have all those ingredients. Did you mix it in the mixer or by hand? I usually knead by hand but if the dough hook works maybe I'll give that a go.

    1. Hi Clarissa, I mixed the focaccia by hand as I really want to try to get the hang of kneading breads better. I hope you'll like the focaccia when you make it, we had what was left of it toasted with avo and cheese under the grill as part of our breakfast this morning and it was lovely. Meg:)

  4. Yum ...my Mum used to make the raspberry and coconut slice for us when we were kids for afternoon tea after school...yum yum. I like that you have made a healthier version too.

  5. Have you tried the best bread roll recipe yet on my blog...try it on the weekend for lunch you'll need to make 3 hrs before you want to eat...seriously so yum....my recipe has the thermomix recipe but there is a link to the normal recipe. Just use the search bar to find bread rolls

    1. I am searching out easy bread making recipes, Kathy, to try to improve my skills so I will look that recipe up again and make sure I try it. I do have a Thermomix but I'm keen to get the feel and technique of kneading right. Meg:)

  6. Oh my goodness, everything looked delicious! I try to bake bread (2 loaves at a time) once a week for my hubby to use for his sandwiches that he takes to work with him each night. I also try to make muffins, banana bread or some kind of treat for him to take also.

    1. Homemade bread is something I'd really love to master, Debbie, but haven't as yet. I was really happy that the focaccia turned out well:) It's nice to be able to send family off to work or school with homemade foods, like you do for your husband. Meg:)
