Two Salads for one Yoghurt Dressing

We eat salads year round here. In Winter, warm salads made with baked and nourishing veggies and in Summer, as it is here now, fresh and simple salads are a staple. With our Summer salads, I like dressings that are light and tangy. My favourite is a very simple yoghurt dressing that I use as an alternative to mayonnaise.

Light & tangy yoghurt dressing.

This dressing works really well with homemade potato salad and coleslaw too.  It takes just a few minutes to whip up. All you need for a small salad is 1/3 cup natural unsweetened yoghurt, 1 teaspoon of seeded mustard and 1/2 to a full teaspoon of raw honey. Salt and pepper too if you wish.

Homemade Coleslaw:  Wash and finely shred cabbage. Chop spring onion, capsicum and celery. Grate carrot. Mix together with yoghurt dressing and chill.

Homemade potato salad with the same yoghurt dressing.

Simple Potato Salad:  Wash, chop and steam potatoes until tender but not too soft. (Leave the skin on for extra nutrition and fibre.) Rinse under cold water and drain. Mix through yoghurt dressing. Add some chipped spring onion or chopped chives if you have some. Chill until ready to serve. 

On warm Summer evenings, homemade salads made with a tangy and refreshing dressing like this one are perfect  for lazy dinners and barbecues. What's your favourite Summer salad or dressing?

  1. Both of these sound delicious, I love making up home made coleslaw and potato salad and I'm always looking for variations for the dressings so I'll give these a try sometime :)

    1. I hope you'll like the dressing with your coleslaw and potato salad, Katrina. Adjust the honey to suit your taste and to soften the tang of the yoghurt. Meg:)

I tend to make an easy homemade egg mayo, and then using about a third of a cup of it as a base, I will add a bit of sour cream, chopped herbs, and something from the spice rack that goes with the salad I'm dressing, I guess you would call it a Ranch style dressing, so quick and easy, and so much better for you than shop bought.

  5. I'm always up for new salad dressings Meg, and this yogurt one will be so easy to do. Like Cheryl above, I make a boiled mayo to use as a base for many different dressings, plus we really love the oil, egg and lemon juice dressing joojed up with the stick blender. With our salad addictions, we can never have too many dressings in our repertoire.

    1. I'm a salad addict too, Sally. I will happily eat leftover salad for breakfast! You can adjust to taste with the honey by adding a little more if you don't want the yoghurt dressing too tangy. Enjoy! Meg:)

    1. It's a simple dressing, Tania, but I find it works! Besides the potato salad and coleslaw, I use it in a mixed salad of greens, tomato, cucumber, sprouts and chicken too. It's delicious but the probiotics in the yoghurt are good for you too! Meg:)

  7. We eat salad almost every day too Meg. Usually we just plop straight yoghurt on, sometimes mixed with a bit of sweet chilli sauce, but your combination sounds yummy. I'll give it a try.
