Yesterday's Bake

Baking started early for the day was forecast to be unseasonally hot. If I was going to turn the oven on, it was going to be before the sun got too high in the sky. 

Wholemeal Pesto Bread Rolls

As I am trying to bake better breads, I decided to practise with wholemeal pesto bread rolls. I followed this Taste recipe, with the addition of a few scoops of tomato pesto I had in the fridge to use up, and then left my dough to rise out in the warmth of the sun. It doubled in size quickly and from it I made eight little bread rolls. 

Simple Weetbix Slice

While the bread roll dough was proving, I helped my son to bake this simple cereal slice. Just crushed Weetbix, butter and a few other pantry staples make a scrumptious afternoon tea time treat. Icing always seals the deal as far as my son is concerned anyway!

Nutty Choc-Chip Cookies

As soon as the slice was in the oven, I made a batch our favourite nutty choc-chip cookies. I used brazil nuts in these cookies this time but I sometimes make them with cashew nuts or macadamia nuts. I always mix in dark chocolate chips which I buy when they are on special. This batch of cookies went into the freezer to save for later.

All of this baking, and the resulting washing up, was finished well before lunchtime. With freshly baked and soft bread rolls for lunch, full of wholemeal goodness and pesto flavours, it was rather a delicious way to end yesterday's bake.

  1. The bread rolls look great and I remember making the weetbix slice when the kids were in primary school. I remember the Day to Day Cookery book when I was doing home ec in Grade 8 [many years ago]. Have a good week. Kathy

  3. No baking here as I am already puttong on weight unfortunately. I did bake when the children were growing up and now my grandchildren do the baking in the school holidays. Thank goodness it is cooling down again, Meg.

    1. Today is overcast and cooler here, Chel. Yesterday, I covered my veg so the lettuce and spinach didn't fry in the heat! I bake each week but when I make sweet things I always reduce the sugar in them to account for the icing or the chocolate chips or jam.

  4. Hi Meg, You are such an excellent baker. I made an apple crisp last week. I also am still munching on some oatmeal butterscotch cookies. Yum!

  5. I read this and went straight to the kitchen to grab that nearly empty wheetabix packet. When I realise I didn't have cocoanut I added oats and raisins instead ...so who knows what it will turn out like!

  6. Meg the pesto rolls turned out really well. You must be pleased with them. Weetbix slice, that's motivation for today's bake. We're into our autumn weather here in SA, with my wood stove going every day, so I'm baking everyday too.

    1. Thanks, Sally. I am finding this a good time to practise baking bread. The rolls were quite nice. We had a wood stove when we were growing up and I loved it's beautiful warmth in the colder months. Wonderful for baking too. MegXx

  7. I love the sound of the pesto rolls and bet they were divine. I also enjoy a good batch cook. Might as well make plenty if the oven is going on. I don't think I have made Weetabix slice in nearly forty years. I would have to buy some Weetabix though so it won't be made for a while as we are trying to avoid shopping unless it's really urgent.

    I too have been on a baking spree.
    With the help of my breadmaker(I know it's cheating) I have made bead, hot cross buns, bread rolls, pizza bases, free form breads and breadsticks...We have loved it all .
    Some we make is with premix Rye Sordough and others are from scrTch.
    Yours all look lovely too.

  9. I've never heard of Weetbix slices, they look scrumptious. I don't bake much at all but my children do a lot of baking and my husband bakes bread. Have a good weekend.

    1. I use Weetbix in a couple of recipes, Christina. There's this slice and another that makes a loaf. I save the crumbs from the bottom of the cereal packets and then use them up. Hope you are having a lovely weekend too. Meg:)

  10. All this isolation seems to make us want to cook more, well for me it seems to. I have been making cafrot cake this week and last week I did a boiled pineapple fruit cake and Anzac biscuits. I found some yeast in the back of my fridge so will try and make some bread or rolls. Your rolls looked really good, hope mine are as good. Thanks for sharing.

    1. It sounds like there's lots of delicious baking happening in your home, Rosie. Pineapple fruit cake sounds scrumptious!

      Perhaps, staying at home is giving people more time to cook from scratch more and to make meals that are comforting to them. Tonight, we are having split-pea soup as the weather is rainy and colder so perfect for that. I hope you rolls turn out beautifully. MegXx

  11. My baking has consisted of mostly making biscuits which seem to get eaten very quickly. I have also been making savoury flapjacks which we love with soup. Your baking looks wonderful especially your pesto rolls.

    1. Biscuits can disappear around here very quickly too so I often freeze some so I know there'll be some left for later. I've never made flapjacks. Are they like a pancake? Meg:)
